For the Crust
- 1 1/4 cups of graham cracker crumbs
- 1/4 cup granulated sugar
- 1/2 cup unsalted butter, melted For the Cheesecake Filling
- 8 oz cream cheese, softened
- 1 1/2 teaspoons of vanilla extract
- 1 cup heavy cream
- Squeeze of lemon For assembly and garnish (optional)
- Squeeze of lemon
- 1 cup fresh strawberries
- 1 1/2 teaspoons of vanilla extract
- Whipped Cream for garnish
- Glass jars (8 oz Clear Glass Jars)
Instructions:
- Prepare the Crust: Mix graham cracker crumbs, granulated sugar, and melted butter in a bowl until well combined. Divide evenly among 3 individual glass jars, pressing down firmly to form the crust.
- Make the Cheesecake Filling: In a mixing bowl, beat softened cream cheese until smooth. Add vanilla extract and lemon, and continue to beat until creamy and well combined. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
- Assemble the Cheesecake Jars: Spoon layer the cheesecake, filling it over the graham cracker crust in each jar and filling them halfway. Arrange a significant layer of fresh strawberries thinly sliced on top of the cheesecake filling in each jar.
- Chill and Garnish: Cover the jars with lids and refrigerate for 2-3 hours, or until cheesecake is set. Before serving, garnish each jar with a swirl of whipped cream, fresh strawberry slices, and a squeeze of lemon.
