DIY - Pumpkin Spice Cheesecake Trifles in Glass Mason Jars

Pumpkin Spice Muffin
- Ingredients
- 2 & 1/2 Cups All-Purpose Flour
- 1 Cup Granulated Sugar
- 1/2 Cup Dark Brown Sugar, packed
- 1 Tablespoon Baking Powder
- 1/2 Teaspoon Salt
- 2 Teaspoons Cinnamon
- 1/2 Teaspoon Nutmeg
- 1/4 Teaspoon Ground Cloves
- 1/4 Teaspoon Ground Allspice
- 1 Tablespoon Vanilla Extract
- 1 (15 ounce) Can Pure Pumpkin Puree
- 2 Large Eggs
- 8 Tablespoons Melted Butter (Cooled)
Pumpkin Spice Muffin Instructions
- First, preheat your oven to 350 degrees fahrenheit & line a baking sheet with parchment paper.
- In a medium bowl, mix the 2 & 1/2 cups all-purpose flour, 1 cup sugar, 1/2 cup dark brown sugar, 1 tablespoon baking powder, 1/2 teaspoon salt, 2 teaspoons cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon ground cloves, & 1/4 teaspoon ground allspice.
- In a separate bowl mix 1 can pure pumpkin, 2 large eggs, & 8 tablespoons cooled melted butter.
- Create a funnel in the dry ingredients & pour the liquid mixture into the center. Mix with a spoon until combined.
- Pour the batter on a baking sheet lined with parchment paper, leaving 1-2 inches of edge for spreading.
- Bake your Pumpkin Spice Muffin Tops for 15-20 minutes.
- Let cool on a wire rack & then cut into chunks.
Pumpkin Spice Cheesecake
- Ingredients
- 8 Ounces Cream Cheese, softened
- 1 Cup Pure Pumpkin Puree
- 1/2 Cup Granulated Sugar
- 1 Teaspoon Pure Vanilla Extract
- 2 Teaspoons Cinnamon
- 1/2 Teaspoon Nutmeg
- 1/4 Teaspoon Ground Cloves
- 1/4 Teaspoon Ground Allspice
Pumpkin Spice Cheesecake Instructions
- While the muffin batter sheet is baking place the 8 ounces cream cheese, 1 cup pure pumpkin, 1/2 cup granulated sugar, 1 teaspoon vanilla extract, 2 teaspoons cinnamon, 1/2 teaspoon nutmeg, 1/4 teaspoon ground cloves, & 1/4 teaspoon ground allspice in a medium bowl & blend until smooth. Cover the bowl with plastic wrap & place in your refrigerator for later use.
Brown Sugar Whipped Cream
- Ingredients
- 1 & 1/2 Cup Heavy Whipping Cream
- 3 Tablespoons Brown Sugar
- 3/4 Teaspoon Pure Vanilla Extract
Brown Sugar Whipped Cream Instructions
- While the pumpkin spice muffin sheet cools place 1 & 1/2 cups heavy whipping cream, 3 tablespoons brown sugar, & 3/4 teaspoon pure vanilla extract in a chilled medium bowl & whisk on the highest speed for 1 minute, or until stiff peeks form.
Pumpkin Spice Cheesecake Trifles Instructions
- First, add a layer of pumpkin spice muffin cubes to the base of each jar, then add a layer of pumpkin spice cheesecake, followed by a layer of brown sugar whipped cream. Repeat these steps & top with caramel sauce if desired.
- Serve immediately or chill for 2-3 hours until ready to serve.
